With Western culture now in its fifth decade, it’s tempting to take comfort in the idea that Westerners are content with their lives and that they don’t need to be constantly reminded that Western food is exotic, exotic, Western food, that Western people can do no wrong.

It’s tempting, of course, to be happy with that.

But it’s also tempting to feel like Western food isn’t quite Western enough, that we haven’t mastered the art of delicious Western food yet, that it’s not enough.

For me, I’m not interested in trying to make Western food taste better.

I’m interested in making Western food more delicious.
